Although its format makes it look like a casual, flip-through coffee table book, this is actually the most well-researched and scholarly of the origins-of-Christmas-carols books I've found. In depth stories, historical context, background information, antiquated vocabulary words defined -- it's all here -- plus Currier-and-Ives-ish good old fashioned illustrations, and even a CD of 24 songs.
