Literally my kitchen bible. I wish there were more photos, and the looseleaf format hasn't held up well, but this is my kitchen go-to for.... so many things. The biggest downside is that when there is a choice between fat and lean, this cookbook always picks fat; and the recipes are often not naturally kosher - I have to adjust them. Otherwise, it's a great basic. I find the recipes less complex in here than in the Cook's Illustrated recipes, so this is a more suitable basic cookbook for someone who just wants to cook and get out of the kitchen than some of the other books produced by America's Test Kitchen.

I had a chance at the beach this summer to read this cookbook, I would not waste my money. It covers the basics but Joy Of Cooking is better by far!

I absolutely LOVE this cookbook! The folks at America's Test Kitchen have done all the research and hard work finding the best recipes, ingredients, tools, and tips. There are so many recipes in here for classic American food that I love to make, but also a lot of creative new recipes for dishes I never would have thought of but can't wait to try. The full color photos are so helpful, and I love all the little asides that are added to the various recipes (over 1,200!) and which help ensure delicious results, time after time. An incredible cooking resource!

My only problem with the ATK cookbook is that there's not more recipes in it! The five-ring binder-style construction was an extremely thoughtful move on the part of the authors—when I'm making something detailed or want to reference a picture/diagram while cooking, I just remove the recipe page and tape it to a cabinet at eye-level.

I have had this book for almost a year and I absolutely could not live without it in the kitchen. Both America's Test Kitchen books I own are replacing my well-loved and often-used Fannie Farmer Cooking and Baking books. These recipes are somewhere between Martha Stewart and my dad. Recipes that any home cook could make, but wonderful enough to please any foodie. Right up my alley.
