I was on an airplane, and I found myself completely engrossed in a book.

I decided to read it cover to cover without any distractions.

The moment I opened the book, I was transported into a different world.

The words on the pages seemed to come alive, painting vivid pictures in my mind.

My initial feelings towards Tom Colicchio were far from affectionate when I first cracked open this book.

One of my all-time favorite cooking books is this one.

I read it way back before I had any idea who Tom C. was. At that time, he wasn't yet famous from "Top Chef".

Awesome book! I got it from the library, and had ordered my own copy before I finished the introduction. I'm an experienced home cook and baker, and I already have a firm grasp of many basic techniques. However, I also know there's always something to learn to improve my cooking.


I don't usually work without a recipe (even if I deviate from it sometimes), and I don't often venture out of my familiar ingredients. But I've always wanted to enhance my intuitiveness and creativity in the kitchen, and this book has already had that effect. Today, on my first visit to the store with dinner in mind, I came up with a combination of vegetables to go with fish that I never would have thought of before. I'm also trying new things like Hen of the Woods mushrooms.


At one point (now that I've finished the book), Tom says something like one idea leads to dozens, and that's so true. Just thinking about the mushrooms made me come up with more ideas for them. I'm sure those ideas aren't new, but they're new to me, and that's what matters.


Highly recommend this book!

I read through the bulk of the text.

Although I can't claim that I've prepared every recipe, or in the proper order for that matter (and let's not forget that I'm a vegetarian), I must say that the chapter on mushrooms truly changed my life.

For weeks now, I have been making mushrooms every single week, and I will never go back to any other method of preparation after experiencing Colicchio's.

Regarding the cleaning, I'm not overly meticulous about peeling them with a paring knife every time. I gave it a try once, but I quickly realized it wasn't worth the effort. Instead, I simply give them a quick wipe.

However, the actual cooking process is just amazing. It's so delicious that I have to resist the urge to eat the cooked batches while they're sizzling in the pan for those few minutes.

Yay for mushrooms! They have become a staple in my diet, and I can't wait to explore more of the wonderful recipes and techniques in the text.
