As a fairly proficient home cook, I found plenty to learn in this book. For a beginner looking to get started, this is a comprehensive but nonthreatening resource to learn the most essential life skill there is. Like his baking book, you can use this as a reference book to target what meal or skill you want, or you can comfortably read it straight through.

I didn't expect this book to be so emotional and intense. It was angsty, but not so much that it made me want to stop reading.

Dec was a real piece of work. Harsh, entitled, arrogant, a real a$$h*le. I could not see anyway for Dec and Em to become a couple.

The more time Dec spent with Em, the more layers of both of their personalities were exposed. They both lives with so much pain, past, present, and future.

I’ve had this book for awhile; it’s the kind of book that you keep on going back to as a reference. The book you go to when you read a recipe and it doesn’t quite make sense; or it doesn’t sound right. It’s the book you go to when you want to remember how to do something or when someone uses a term that you don’t understand.
I love how you can start with an ingredient and it takes you from something that’s quite basic to something quite complex, if you’re feeling brave enough to try it.
This is a must have in any kitchen.

One of my favorite cookbooks by the author of "The Minimalist" columns in The New York Times. My go-to book in a pinch, literally is how to cook practically everything, and the recipes are not fussy.

When I got this book, it was being billed as the new Joy of Cooking (maybe it still is), a basic cookbook that covers everything from how to cook to what to cook. And, for the most part, it is. The directions are simple, Bittman clearly explains everything from the type of pots and pans you should have to the basics of cooking meat. At the same time, I find that I rarely use this book, unless I'm looking for a simple recipe for vegetables or salad dressing or something else that is to serve as a complement to the main course I'm making. There's a fine line between simple and bland and unfortunately, Bittman seems to have crossed over to bland for many recipes. The recipes I've tried all turn out just fine, but they're usually in need of much more flavor. I find it's best to use these recipes as a base and then to add to it, according to your taste.
That said, I wouldn't want to do without this book. It's handy to have in the kitchen since it truly does seem to have a recipe for anything I've needed. Except tea sandwiches...

No secrets here, the title gives it away. This book literally walks you through how to use a kitchen and prepare food for human consumption. Often with very good results, even if you are a reluctant cook, like myself. (Don't let the number of cookbook reviews on here fool you - I love eating good food, I just find the daily preparation of it a drag.) I use this book often, evidenced by the fact that it opens to many favorite recipes automatically. This is a great book for anyone wanting to learn the basics of choosing vegetables to understanding how to cook meat, to getting ideas of herbs to pair with dishes. I find it helpful for the most basic of questions, i.e. how hot should the over be for a baked potato, to more complicated and successful dishes. Everyone should have this in their kitchen, probably even professional chefs!

Hands down the single most useful cookbook I own. I bought this in 1998 shortly after the first edition came out, and have since given copies to many people. If you cook, you need this book. If you don't cook and want to begin, this is (in my opinion) the best place to start.

This book is noteworthy in that it's useful for both total novices and experienced cooks. Bittman writes in an informative, down to earth style. No "gourmet" pretension here. At the same time, he's very opinionated, and I totally agree with most of his views. Buy locally whenever possible, avoid processed foods and gimicky "mixes", and cook simple, delicious food.

Not every recipe in here is great, but the vast majority are very good, and many are outstanding. Given the incredible, exhaustive amount of ground the book covers, the overall quality is very high. This is not just a collection of recipes - it's a comprehensive modern manual for home cooking.

Before I had kids, I used to say - if it takes me more than 10 minutes to make, it's not worth it. Also, I was so horrible and clueless about cooking (baking and anything else to do with food included) that when my husband ran to the kitchen because the cookies were burning, I calmly told him - "it's OK. Don't worry. Just flip them over!" I was completely ignorant about how cookies baked in the oven. And making a garden salad brought me to tears. This was my baseline.

Now, after two kids and seeing what horrible choices kids had when we ate out (it really didn't matter which restaurant and of course, we didn't have to order it from the kids menu, but why should it be that way?), I decided that I must learn to cook for our kids sake (my husband jokes that my love for him didn't induce me to cook, but my love my kids did. To that which I've answered, you can cook something for yourself. They can't). I was trying to stick to my old 10 minute rule, but with two young kids, it might take me 10 minutes to take the eggs out from the refrigerator let alone crack it and beat it. So, when I came across this book, I was intrigued by the title. How to cook EVERYTHING?

Well, even though I've bought about a dozen of cookbooks in the last ten years or so(remember, I don't like cooking), this is the cookbook I keep going back to. It's got great recipes for pancakes and waffles (no more mixes for us) as well as all kinds of soups. I also need to venture out more. This cookbook has whole menus for special days. I started photocopying my favorite recipes from other books and pasting it on to this book (because I might get rid of all the others, but I KNOW this is the one I'm going to keep). So, as a person who really doesn't like cooking and who is easily intimidated by cooking (I'm still very intimidated by yeast. I love baking breads, but all un-yeasted breads. For some reason, yeast, water temp, rising, etc. really intimidate the fledgeling cook within me), I love this book because it makes me feel like I can cook.

I bought this book my best friend gave me “How to cook everything: the basics”. Bittman is just outstanding at explaining how to cook well and build on your knowledge of food, including choosing the right produce, meat, etc. He provides us with a fool-proof way of making truly delicious and satisfying meals, most of them pretty healthy as well. I definitely recommend it!

This is a great book. It covers the basics for beginners, but as a not-a-beginner I loved the advice on how and where to buy ingredients. It also has a lot of great foundational recipes for a ton of different dishes you can build off of.
